Carrot Curry Soup
While
interviewing Elaine Daniels this month, I asked her
if she had a special recipe and she did! She doesn't
know the origin. She said she has had it for over
30 years.
Carrot Curry Soup
Ingredients:
1
onion
1 clove garlic
Sesame oil to coat
1/4 tsp sage
Fresh ground pepper
1/4 tsp oregano
1 tsp crushed bell pepper
1 1/2 C chopped rare carrots
2 C chicken broth
1- 4 oz pkg low fat cream cheese
Curry to taste (approx 1 T)
Parsley & chives Recipe:
Saute onion and garlic
Add
sage, pepper, oregano, pepper
Add
carrots. Saute briefly.
Add
broth. Cook on low until tender.
Add
cream cheese and 1 T curry. Blend.
Heat.
DO NOT BOIL.
