Black Bean Salsa
Party size (1 quart)

2 lbs cooked or canned black beans (rinsed)
3 ears of corn (grilled)
½ bunch of cilantro leaves (chopped)
4 oz. Chipoltle peppers in adobo sauce
½ red onion diced
1 tomato diced
¼ olive oil

Mix beans, corns, onions and cilantro
Puree oil, chipoltles, limejuice and tomatoes
Combine oil mixture with bean mix. Serve with tortilla chips or your favorite Mexican dish.
